      <title>grilled cheese and tomato soup...</title>

      <description>&lt;div&gt;...it's what's for dinner tonight, and I can barely stand still being here at work!
&lt;br/&gt;
&lt;br/&gt;It's really been too long since I've had a grilled cheese sammich.  I've been stuck on these *amazing* tortillas my hubby found a few months ago (Mis Abuelito's torts, made here in Sacramento), and have been eating the crap out of those lately.  It's almost like having a grilled cheese sammich, but then I remembered ~smacks forehead~ that's just a quesadilla, you silly biotch! : )

      <description>&lt;div&gt;Have you tried grill cheese with a bit of chopped, raw onion? That's how I like them.  
&lt;br/&gt;I had one for dinner last night and it was wonderful.
&lt;br/&gt;I order them in restaurants too, I've never had a problem having them add onions to a grill cheese sandwich. But sometimes they cook the onions. Then its different.&lt;/div&gt;

      <description>&lt;div&gt;a derivation of grilled cheese, to be sure.

&lt;br/&gt;but i make a fantastic one- i use bumblebee tuna in oil, 'cuz it tastes better.
&lt;br/&gt;
&lt;br/&gt;i mix a spoonful of bob's big boy bleu cheese (or use your fave organic- i just find that if you're lucky enough to have a place that still sells bob's big boy dressings, you are soooo lucky), two spoons of mayo; today's sammich was whole grain wheat with a slice of sharp cheddar on each piece of bread; thick blobs of tuna and two dashes of garlic salt, one dash of pepper.  grill in real butter.  enjoy!

&lt;br/&gt;i made these for me and the hubby (the boys got plain grilled cheese on white- they're so vanilla, those children of mine) and he ate his before i had even finished slicing mine.  he wanted another; i put my foot down.  &lt;/div&gt;

      <description>&lt;div&gt;I caught a bit of a discussion of grilled cheese sammiches on the radio this morning! A synopsis of the suggestion includes (beside the basic tomatoe soup): putting grated parmesan in the melted butter you cook the bread in to make it cheesey crusty, sprinkling the outside of the bread with Italian seasoning before cooking, adding ham (and others who thought that meant it was no longer a grilled cheese sammich), a Welsh caller suggest the Welsh rarebit addition of a bit of ale mixed into grated cheese which then fills the sammich. 
&lt;br/&gt;
&lt;br/&gt;All told, it was a nice addition to the Monday morning commute.&lt;/div&gt;

&lt;br/&gt;A 100-pound woman ate 26 grilled cheese sandwiches in 10 minutes Wednesday at a New York restaurant, winning the World Grilled Cheese Eating Championship.
&lt;br/&gt;
&lt;br/&gt;Sonya Thomas won $8,000 for the contest at the Planet Hollywood restaurant in Times Square but said she was disappointed in her performance.
&lt;br/&gt;
&lt;br/&gt;"I could have done better," she said, adding that she was aiming for 30 sandwiches.
&lt;br/&gt;
&lt;br/&gt;Thomas said she had to catch a train shortly after the contest to make her shift at a Burger King on Andrews Air Force Base in Virginia, where she is a manager.
&lt;br/&gt;
&lt;br/&gt;She said she has a naturally big stomach capacity and heavily soaked her sandwiches in water to make them easier to swallow. She said to train she drinks large amounts of water to expand her stomach capacity and practices relaxing her throat.
&lt;br/&gt;
&lt;br/&gt;Thomas, whose normal weight is about 100 pounds, estimated she gained 10 pounds during Wednesday's contest.
&lt;br/&gt;
&lt;br/&gt;It was a close win. Her nearest competitor, Joey Chestnut, ate 25 1/2 sandwiches.
&lt;br/&gt;
&lt;br/&gt;On the eating contest circuit, Thomas is known as the "Black Widow," apparently because she has defeated so many larger men.
&lt;br/&gt;
&lt;br/&gt;She holds numerous world eating records, including 46 dozen oysters in 10 minutes, 11 pounds of cheesecake in 9 minutes, 48 chicken tacos in 11 minutes, 37 hot dogs and buns in 12 minutes and 56 hamburgers in 8 minutes.

&lt;br/&gt;The event was organized by GoldenPalace.com, an Internet casino and poker room.&lt;/div&gt;

      <title>Where to go out for a Sammich?</title>

      <description>&lt;div&gt;Huuuuuuuuhhh!!!  I am so craving a glorious grilled cheese right now.  I shall probably make one in a few minutes (american/sourdough/butter/George Foreman Grill).  
&lt;br/&gt;
&lt;br/&gt;But, before I do, I thought I'd ask, does anyone have a favorite place to go *out* and eat a GCS?  In the SF Bay Area, in particular.
&lt;br/&gt;
&lt;br/&gt;My favorite place is the cafe on the California College of the Arts campus, in Oakland.  I don't go ther any more, but I'm tempted to stop by just for a grilled cheese one of these days.  They made huge ones, on big, oval sourdough, with whatever cheese you wanted.  Maybe it was their grill, but the sammiches always turned out sublime &amp;amp;lt;sigh&gt;.
&lt;br/&gt;
&lt;br/&gt;For now, off to the kitchen, though.  And maybe some tomato soup to go with....&lt;/div&gt;

      <description>&lt;div&gt;okay, i know we all have a grilled cheese method, all the way down to what you drink and how you cut the sammich.
&lt;br/&gt;
&lt;br/&gt;kristen's method:
&lt;br/&gt;
&lt;br/&gt;1- heat cast iron skillet on medium and drop two pats of butter per sandwich (but never more than three sandwiches at once)
&lt;br/&gt;2-cheese on bread- one cheese on each bread (usually white and american, i'm a simple girl)- but a dash of garlic salt on one slice
&lt;br/&gt;3-put sammiches on skillet- add a pat of butter on each uncooked side of the sammiches
&lt;br/&gt;4-here's where i get OCD- i actually.... swirl the sammiches around.  clockwise for two turns, flip; counterclockwise for two turns.  this prevents burning and any stickage and usually yields a nice, golden sheen and crust.
&lt;br/&gt;5-remove sammiches; for me, i slice my sammich once diagonally; my husband likes his whole; my twins share a sammich slice twice diagonally; my eldest takes his american child's standard: sliced into four pieces shaped like squares. 
&lt;br/&gt;6-serve with your chip of choice (nacho cheese doritos for the men, salt &amp;amp; vinegar lay's for me) and crack open a diet coke! (kool-aid for the boys)

      <description>&lt;div&gt;today i started a 15-day cleanse for liver, kidney, blood, etc. part of the regime is limiting my body to fruits, veggies, whole grains (in limited quantity) and absolutely no refined sugar, caffiene, meat or dairy. yikes! 2 whole weeks without the ooey gooey goodness of melted cheddar between slices of soft buttery bread!

The structure ressembles a 8-foot tall egg, which looks quite arty as it burns. I stay in the structure for about 5 minutes and then walk out with toasted cheese sandwiches ready for snacking.

      <title>lipstick, lolipops and limburger...</title>

      <description>&lt;div&gt;...I am rarely smitten by someone at first interaction, let alone first glance. I was in the cheese aisle when it happened, so I'll bring this to you...my peeps.
&lt;br/&gt;
&lt;br/&gt;When I go to the market, I typically get in, grab a cart, fill it with stuff, pay for it, and pull out of the handicapped spot that I usually park in (because there are more than just physical handicaps as you're about to read...)
&lt;br/&gt;
&lt;br/&gt;But as I was groping a small innocent bag of mozzarella, I saw her working her way over to the same section of cheese that I was in. My peripheral vision told me someone was rapidly approaching, but her fragrance wafting high above the limburger was what caught my attention. 
&lt;br/&gt;
&lt;br/&gt;I looked up and literally gasped for air. Thank God I work out on regular basis otherwise she would have heard nothing more than a wheeze and a gulp. She looked right at me. I felt like I was in 5th grade for about 4 seconds. Her eyes batted a couple of times and the most amazing smile was radiating from a face that was as perfect as a winter morning and as flawless as a summer night. She had all of the physical attributes that I find attractive...and about a dozen more I had no idea existed.
&lt;br/&gt;
&lt;br/&gt;"Hi. How are you?" She asked. "I'm doing well...and you?" my voice quivered. "I'm just trying to get some last minute shopping done before my family comes into town tomorrow..." 
&lt;br/&gt;
&lt;br/&gt;There was no ring on her finger, but more importantly, no tan line where her ring would go lending to the notion that she may be recently divorced. (I don't know, that just where my head goes.) 
&lt;br/&gt;
&lt;br/&gt;"Nice, good luck with that..." I told her. Her smile still on full blast was just killing me. "I hope you have fun with them...have a beautiful day," as I started backing my cart around the organic bananas and strawberry displays. "You too...thanks..." was the last thing I heard fall from her lips, resonate off of the fruit and dance into my ears.
&lt;br/&gt;
&lt;br/&gt;I started to make my way towards the front of the store, when I didn't yield to the other carts whom were already moving with the flow of traffic when I saw her again and she acted like she was going to crash into my cart. We both kind of laughed, she smiled, I cowered for safety in the nearest checkout stand. By the time the guy behind the register gave me my total, bagged my groceries and had a conversation with me that I have no clue what was about. She was just getting into the line next to me. I made my way out of the store looking over at her and she smiled at me while I made my way back out into the big, bad world. 
&lt;br/&gt;
&lt;br/&gt;FUCK! was the only thing I could think to myself. I'm sure a girl like that gets hit on all the time, and the last thing I want to do is make her uncomfortable by asking her out. Well, I thought I could go back into the store and act like I forgot something, but that would be obvious. Then I thought, I could act like I was on the phone and when she came out, pretend I didn't see her and rear-end her car lightly so we would have to exchange information...but that would just be plain creepy. So I left, and started on the trek home...
&lt;br/&gt;
&lt;br/&gt;My question to you guys is: What the fuck do you do in a situation like that? Ask her for her number? Quickly ask some probing questions to find a common ground to talk about? What I really felt like telling her was..."Hi, I may never see you again and I think you're really pretty and I'm just wondering if you'd like to have coffee with me sometime..." 
&lt;br/&gt;
&lt;br/&gt;I'm really not good at that stuff. At the risk of sounding like some pompous prick, I haven't been going out with many girls lately because I got tired of hearing..."I normally don't do this on the first date, unless I really like the guy..." I figured the only way to stop hearing that was to stop going out with girls who work in certain "venues", drive expensive sports cars, live on the beach and always seem to have an abundance of single dollar bills on their person while working only 3-4 nights a week.

&lt;br/&gt;Any suggestions for the next time?&lt;/div&gt;

&lt;br/&gt;Looks like Diana Duyser's going to get some really nice bread for her eBay item -- $28,000 for a 10-year-old grilled cheese sandwich that she believes bears the image of the Virgin Mary.
&lt;br/&gt;
&lt;br/&gt;Bidding on the Internet auction house closed Monday night. The winning bidder wasn't disclosed on the Web site, but was identified by The Miami Herald as GoldenPalace.com, an online casino.
&lt;br/&gt;
&lt;br/&gt;Photos posted on the site show what can be viewed as a woman's face emblazoned on the triangular half-sandwich, a bite taken out of one end.
&lt;br/&gt;
&lt;br/&gt;GoldenPalace.com executives said they were willing to spend "as much as it took" to own the 10-year-old half sandwich with a bite out of it.
&lt;br/&gt;
&lt;br/&gt;"It's a part of pop culture that's immediately and widely recognizable," spokesman Monty Kerr told the newspaper in a story on the Herald's Website. "We knew right away we wanted to have it."
&lt;br/&gt;
&lt;br/&gt;The new owners of the sandwich didn't want to risk it getting lost in the mail, so Kerr and Steve Baker, CEO of GoldenPalace's management company, Cyberworld Group, flew to South Florida on Monday to meet Duyser and make arrangements for a sandwich handover.
&lt;br/&gt;
&lt;br/&gt;"I'm numb right now," Duyser told the Herald right after the auction ended. "I can't comprehend that this is all happening."
&lt;br/&gt;
&lt;br/&gt;Duyser, 52, had the sandwich up for bids more than 10 days ago before eBay pulled the item on Nov. 14, saying it didn't post joke items.
&lt;br/&gt;
&lt;br/&gt;The page was restored on the eBay Web site on Nov. 15 after the company was convinced that Duyser would deliver on the bid, said eBay spokesman Hani Durzy.
&lt;br/&gt;
&lt;br/&gt;Duyser has received national publicity for the half-sandwich, which received more than 1.6 million first-time visitors since the new posting. She set up a pre-approval process for bids after receiving some outlandish offers were determined not to be legitimate, Durzy said.
&lt;br/&gt;
&lt;br/&gt;Durzy said the novelty has "captured the imagination and the fancy of society."
&lt;br/&gt;
&lt;br/&gt;"We've sort of followed the listing of this with kind of amusement over here. It's fun to watch," Durzy said from San Jose, Calif.
&lt;br/&gt;
&lt;br/&gt;Duyser, of Hollywood, thought eBay would be the best place to show off the sandwich, made on plain white bread with American cheese, no butter. She said she took a bite after making it 10 years ago and saw a face staring back at her.

&lt;br/&gt;Duyser put the sandwich in a clear plastic box with cotton balls and kept it on her nightstand. She said the sandwich has never sprouted a spore of mold.
&lt;br/&gt;
&lt;br/&gt;At first, she was scared by the image, "but now that I realize how unique it is, I wanted to share it with the world," Duyser earlier told the Herald.
&lt;br/&gt;
&lt;br/&gt;There was no published telephone listing for her and she didn't immediately respond to an e-mail sent Monday via e-Bay.

      <description>&lt;div&gt;I use a thick slice of beard, homemade is best.  Butter both sides.  Use Kraft grilled cheese slices for the base, then cut small strips of marble and space accordingly.  Use a toaster oven and put in openface single piece of beard.  First step, use just the top browning setting to get the cheese a head start.  Then switch the setting to both top and bottom.  You wanna time it so the cheese on top gets a nice brown and bubbles but doesn't burn to a black color.  The marble cheese cooks at a different rate so the strips will allow the slice underneath to cook up.   Hope you enjoy. &lt;/div&gt;

&lt;br/&gt;"Given the business that we are all so painfully...I mean gainfully employed in, as always, we should do things in a more unorthodox fashion...there is no need to go over the top with trying to impress people that I know none of us really like anyway...they are record industry people for Christ's sake...cheap beer, boxed wine, finger foods, and several 6-foot grilled cheese sandwiches will suffice..." 
&lt;br/&gt;
&lt;br/&gt;I can't remember the last time I had so many people staring at me with that scared-deer-in-the-headlights look. The sound of a few dozen batting eyes was deafening.

      <title>A hello and question.......Foreman vs. Skillet</title>

      <description>&lt;div&gt;Hello to everyone......my name is Chad and I am down with GCS.
&lt;br/&gt;
&lt;br/&gt;Here are my thoughts on the Foreman Grill (often call the "Foreskin" around the house) vs. Skillet.
&lt;br/&gt;
&lt;br/&gt;The skillet is just traditional and make the best sammich in my opinion. Takes a little more time due to the flipping, and sometimes it is hard to get the cheese fully melted without buring the bread.
&lt;br/&gt;
&lt;br/&gt;The Foreman has a lot faster cooking time and that is nice.....the draw back for me is the lid is so heavy it tends to smash the bread, thus causing bread to loose some of it's beloved fluff under the crisp toasted outside. Lastly the Foreman is a S.O.B. to clean.
&lt;br/&gt;
&lt;br/&gt;Jusrt wondering what athers opinons are.....

&lt;br/&gt;Kid favorite gets tweaked to create panini - American-style
&lt;br/&gt;
&lt;br/&gt;HE DOESN'T LOOK like a bully, nor does he talk like one - most of the time. But ask Cafe 817 Chef Sandro Rossi to change his perfect recipe for grilled panini, and Rossi becomes the panini-Nazi.
&lt;br/&gt;
&lt;br/&gt;"Sometimes, they ask for more mustard or more cheese or something," says the Oakland chef. "No! We are very dogmatic about our panini. We have studied the balance of things and we know best. If they want us to change it, we tell them they are ruining the sandwich."
&lt;br/&gt;
&lt;br/&gt;Rossi's Italian-style grilled cheese sandwiches were a novelty when he opened the cafe 12 years ago. People liked them, but orders were sporadic because most people had no idea what they were. Since then, panini have become the hot, toasty sandwich of choice not just at Cafe 817, but at restaurants all over the country.
&lt;br/&gt;
&lt;br/&gt;Panini grills, once a rare find, are everywhere. Krups now sells more panini grills than coffeemakers. And to go with those grills, cooks can find two new cookbooks devoted entirely to American-style panini - grilled cheese.
&lt;br/&gt;
&lt;br/&gt;Marlena Spieler, author of "Grilled Cheese: 50 Recipes to Make You Melt" (Chronicle Books, $17.95), maintains that while other countries have their own grilled cheese traditions - the French with their croque monsieur, the English with their Welsh rarebit, the Spanish with their bocadillo - none of those sandwiches are quite so passionately embraced as the American grilled cheese.
&lt;br/&gt;
&lt;br/&gt;"In America, grilled cheese sandwiches are a total culinary icon," says the London-based author. Italians, for whom panini is synonymous with weekday lunch, may quibble with Spieler, but America's appetite for grilled sandwiches with cheese is unquestionable.
&lt;br/&gt;
&lt;br/&gt;In its infancy - as a kid food American grilled cheese is a simple equation: Bread plus cheese plus heat equals pure melty, crunchy bliss.
&lt;br/&gt;
&lt;br/&gt;But both Spieler and San Francisco author and cheese expert Laura Werlin are convinced that Americans are ready for American-style panini - a totally new invention that takes the European idea of a toasted sandwich filled with cheese and savory fillings such as meat, veggies and condiments, and combines it with the all-American tradition of mixing ingredients from different cuisines. The result: A new generation of utterly inspired melted cheese sandwiches.
&lt;br/&gt;
&lt;br/&gt;Spieler, whose enthusiasm for grilled cheese bubbles over, tucks all manner of edibles into her grilled cheese: Preserved lemon, pineapple, cumin seeds, dill, bacon, chorizo, duck, ham, roast beef, pickles, peppers, onions, mushrooms and olives.
&lt;br/&gt;
&lt;br/&gt;"Think of your grilled cheese sandwich as a little black dress," she writes in her book. "Or for guys, a pair of jeans. Dress it up or dress it down. ..."
&lt;br/&gt;
&lt;br/&gt;To entice readers of her cookbook to give fancy grilled cheese sandwiches a try, the London-based author packs the first chapter with five-minute ideas that require just five ingredients.
&lt;br/&gt;
&lt;br/&gt;One of the most important decisions, she says, is what kind of cheese to use. Emmantaler, blue cheese, jack, cheddar, mozzarella, feta or brie are all fine choices. But it is important to know and consider how each cheese melts. Brie, for example, melts so easily that it is best added to an open sandwich. Others, such as feta, barely melt at all.
&lt;br/&gt;
&lt;br/&gt;Choice of cheese should complement the choice of bread, as well as the other ingredients in the sandwich.
&lt;br/&gt;
&lt;br/&gt;"A good melted cheese has contrasts of tastes and textures and yet it melts together into a delicious cohesive whole," she says. Cohesiveness, she notes, is also dependent on the balance of ingredients - the amount of cheese should match the thickness of the bread and the amount of condiments and relishes.
&lt;br/&gt;
&lt;br/&gt;Rossi, who has been grilling panini since he opened Cafe 817 a dozen years ago, is convinced that the balance of ingredients in a great panini is the reason Americans are so drawn to the sandwich.
&lt;br/&gt;
&lt;br/&gt;"Panini is true Italian cooking. It is not based on the American or the Italo-American philosophy of abundance. Real Italian food is a cuisine of scarcity. It's about small quantities of more delicate, higher quality food.
&lt;br/&gt;
&lt;br/&gt;Taking a much simpler approach to the topic of grilled cheese is Werlin, who claims to eat more than her share of the 2.2 billion grilled cheese sandwiches that are made in the United States every year.
&lt;br/&gt;
&lt;br/&gt;Since Werlin launched her book "Great Grilled Cheese: 50 Innovative Recipes for Stovetop, Grill and Sandwich Maker,"' (Stewart, Tabori &amp;amp; Chang, $16.95), she's been elbow deep in grilled cheese. Recently, she made and tasted 200 grilled cheese sandwiches for a contest in Washington D.C.
&lt;br/&gt;
&lt;br/&gt;"The thing about grilled cheese is that it has really stood the test of time," she says, citing a poll that found 30 percent of Americans say grilled cheese is their favorite sandwich.
&lt;br/&gt;
&lt;br/&gt;Werlin believes her book, although it taps into the rich, international tradition of grilled cheese, celebrates - and perhaps stretches - America's definition of grilled cheese.
&lt;br/&gt;
&lt;br/&gt;"Me, I love those ooey, gooey cheese sandwiches where the cheese drips out onto the grill and you have to eat up the little bits," she says. "When I was growing up, I ate one every day, and sometimes two."
&lt;br/&gt;
&lt;br/&gt;Now that's she's grown up, Werlin still eats grilled cheese, but now she dolls it up with different cheeses and adds things like ham, shrimp, tomato and even fruit.
&lt;br/&gt;
&lt;br/&gt;"I don't really go in for highfalutin ingredients that are hard to find," she says. "Grilled cheese is a simple food. It should be easy to make with easy-to-find ingredients."
&lt;br/&gt;
&lt;br/&gt;Simple doesn't mean boring, Werlin adds. Nor does it mean the grilled cheese can't show up at a fancy affair.
&lt;br/&gt;
&lt;br/&gt;"I just had a dinner party last week where I served salad with tiny grilled cheese, cut up small. They were like adorned croutons," she says.
&lt;br/&gt;
&lt;br/&gt;Even more whimsical are Werlin's suggestions for dessert panini - brioche stuffed with brie and apricot jam, with Nutella and goat cheese, or with ricotta and marmalade and draped in chocolate.
&lt;br/&gt;
&lt;br/&gt;"When I was working on this book, I just got to thinking that there was no reason why every recipe had to be savory," she says. "I started playing around I found these recipes that really worked. I see it as a sort of extension of America's love of bread pudding."
&lt;br/&gt;
&lt;br/&gt;RECIPES
&lt;br/&gt;
&lt;br/&gt;Apple, Ham and Cheddar on Sourdough
&lt;br/&gt;
&lt;br/&gt;Serves 4
&lt;br/&gt;
&lt;br/&gt;Cheddar and apple is a classic combination as is cheddar and ham. So why not combine America's favorite cheese with apples and ham and grill them? From "Great Grilled Cheese" by Laura Werlin.
&lt;br/&gt;
&lt;br/&gt;2 tablespoons butter, room temperature
&lt;br/&gt;
&lt;br/&gt;8 slices sourdough bread, 1/4-inch thick
&lt;br/&gt;
&lt;br/&gt;1/4 pound smoky ham, such as Virginia country ham, cut into 4 slices
&lt;br/&gt;
&lt;br/&gt;1 small green apple (about 5 ounces), such as Granny Smith, cut into 1/8-inch-thick slices
&lt;br/&gt;
&lt;br/&gt;6 ounces medium or sharp cheddar, coursely grated
&lt;br/&gt;
&lt;br/&gt;Using a table knife, butter one side of each slice of bread and lay butter-side down on your work surface. Place a slice of ham on each bread slice, folding to fit if necessary. Top with 4 to 5 apple slices per sandwich, followed by the cheese.
&lt;br/&gt;
&lt;br/&gt;Place the remaining bread slices on top, buttered side up. (If the sandwich seems quite thick, press it down to compress the ingredients slightly.
&lt;br/&gt;
&lt;br/&gt;Stovetop method: Heat a large nonstick skillet over medium-high heat for 2 minutes. put the sandwiches in the skillet (in batches if necessary), cover and cook for 2 minutes, or until the undersides are golden brown and the cheese has begun to melt.
&lt;br/&gt;
&lt;br/&gt;Uncover and turn the sandwiches with a spatula, pressing firmly to flatten them slightly. Cook for 1 minute, or until the undersides are golden brown. Turn the sandwiches again, press with the spatula, and cook for 30 seconds, or until the cheese has melted completely. Serve immediately.
&lt;br/&gt;
&lt;br/&gt;Sandwich maker method: Preheat the sandwich maker. Follow directions for sandwich assembly,a nd cook according to the manufacturer's instructions.
&lt;br/&gt;
&lt;br/&gt;Gas grill method: Brush the grill rack with oil and preheat the grill to medium-high. Follow directions for sandwich assembly. Put the sandwiches on the grill and follow directions for the stovetop method.
&lt;br/&gt;

&lt;br/&gt;Mozzarella, Artichoke and Pepper Panini
&lt;br/&gt;

&lt;br/&gt;
&lt;br/&gt;2 baby artichokes
&lt;br/&gt;
&lt;br/&gt;1/8 cup sliced roasted red bell pepper in oil
&lt;br/&gt;
&lt;br/&gt;1/4 cup cubed fresh mozzarella
&lt;br/&gt;
&lt;br/&gt;2 pieces focaccia bread
&lt;br/&gt;
&lt;br/&gt;Clean, trim and core baby artichokes. Boil in salted water until tender. Cool. Place cooked artichokes in a jar with olive oil. Grill peppers until skin is charred. Place in a plastic bag and allow to steam for several minutes. Peel, core and slice the peppers. Store in good quality extra virgin olive oil.
&lt;br/&gt;
&lt;br/&gt;Cut focaccia into desired sandwich size.
&lt;br/&gt;
&lt;br/&gt;Thinly slice artichokes and place about 1/8 cup on one side of the bread. Top with an even layer of peppers. Top with fresh mozzarella. Place second piece of bread on top. Cook on panini grill for about 3 minutes.
&lt;br/&gt;

&lt;br/&gt;Fresh Mozzarella, Prosciutto and Fig Jam
&lt;br/&gt;
&lt;br/&gt;Fresh, milky mozzarella melts into a puddle of soothing, stringy cheese, with a hit of salty prosciutto, and a smudge of sweet fig jam to balance it all. From "Grilled Cheese: 50 Recipes to Make You Melt" by Marlena Spieler.
&lt;br/&gt;
&lt;br/&gt;Serves 4
&lt;br/&gt;
&lt;br/&gt;4 soft French or Italian rolls (or half-baked if available)
&lt;br/&gt;
&lt;br/&gt;10-12 ounces fresh mozzarella, thickly sliced
&lt;br/&gt;
&lt;br/&gt;8 ounces prosciutto, thinly sliced
&lt;br/&gt;
&lt;br/&gt;1/4-1/2 cup fig jam or fig preserves, to taste
&lt;br/&gt;
&lt;br/&gt;Soft butter for spreading on bread
&lt;br/&gt;
&lt;br/&gt;Split each roll, and layer with the mozzarella and prosciutto. Spread the top slices with the fig jam, then close up. Lightly butter the outside of each sandwich.
&lt;br/&gt;
&lt;br/&gt;Heat a heavy nonstick skillet or panini press over medium-high heat. Place the sandwiches in the pan, working in two batches depending on the size of the pan. Press the sandwiches or close the grill and brown, turning once or twice, until the bread is crisp and the cheese has melted. Though the rolls start off as round, once pressed they are considerably flatter and can be easily turned, albeit carefully.
&lt;br/&gt;
&lt;br/&gt;Serve right away, cut on the diagonal.
&lt;br/&gt;

&lt;br/&gt;
&lt;br/&gt;Serves 4
&lt;br/&gt;
&lt;br/&gt;Muffaletta is a New Orleans sandwich - a sandwich that is as loud and snappy with its flavors as is the legendary night life of New Orleans itself. While it's usually eaten cold, the cheese, vinegarette and other goodies make it perfect for heating and grilling. From "Grilled Cheese: 50 Recipes to Make You Melt" by Marlena Spieler.
&lt;br/&gt;
&lt;br/&gt;4 soft French rolls
&lt;br/&gt;
&lt;br/&gt;Extra-virgin olive oil
&lt;br/&gt;
&lt;br/&gt;A few shakes here and there of red wine vinegar

&lt;br/&gt;4-6 cloves garlic, chopped
&lt;br/&gt;
&lt;br/&gt;3-4 tablespoons capers, drained

&lt;br/&gt;2-3 large pinches of dried oregano, crumbled

&lt;br/&gt;1/2 cup chopped or diced roasted red pepper

&lt;br/&gt;4 mild pickled peppers, such as Greek or Italian, sliced
&lt;br/&gt;
&lt;br/&gt;1/2 red or other mild onion, very thinly sliced
&lt;br/&gt;
&lt;br/&gt;1/2 cup pimento-stuffed green olives, sliced
&lt;br/&gt;
&lt;br/&gt;1 large tomato, thinly sliced
&lt;br/&gt;
&lt;br/&gt;4 ounces dried salami, thinly sliced
&lt;br/&gt;
&lt;br/&gt;4 ounces Westphalian ham, smoked turkey or mortadella
&lt;br/&gt;
&lt;br/&gt;8 ounces thinly sliced provolone cheese
&lt;br/&gt;
&lt;br/&gt;Open the rolls and pull out a bit of their fluffy insides. Sprinkle each cut side with olive oil and vinegar, then with the garlic, capers and oregano. On one side of the roll, layer the red pepper, pickled peppers, onion, olives, tomato, salami, ham and finally the cheese. Close tightly and press together well to help seal.
&lt;br/&gt;
&lt;br/&gt;Heat a heavy nonstick skillet over medium-high heat and lightly brush the outside of each roll with olive oil. Place the sandwiches in the pan and weigh down (see note), or place them in a panini press. Cook until golden brown on one side, then turn and brown the second side. Sandwiches are ready when they are crisply golden and the cheese has oozed a bit and crisped in places. Cut into halves, and eat right away.
&lt;br/&gt;
&lt;br/&gt;Note: Weighting sandwiches presses the bread with the fillings and makes a crisper, more compact sandwich. Press them with something heavy, such as a skillet or wide-bottomed saucepan, or a flat lid to fit snugly on top of the sandwiches and a weight laid on top. A few cans of food work well as weights, as does a tea kettle filled with water or a brick.&lt;/div&gt;

&lt;br/&gt;"Buffalo mozzarella is a delicate but flavorful fresh cheese with a stringy or fibrous consistency -- indeed it's the aristocratic European cousin of America's beloved "string cheese".

&lt;br/&gt;so melt the mozzerella goodness on your bread, then top with the bruchetta:

      <description>&lt;div&gt;you can get it at whole foods, and at mexican markets,  i don't know where you get it if you don't live in southern california, but you could try.  it's made specifically to melt, especially for quesadillas, and to drop into soups, and i'll be goddamned if it doesn't make one of the best grilled cheese sammiches on god's green earth!! it's called QUESO DE QUESADILLA   and it melts sooooooooooo perfect.  it's a white cheese, of about the consistency fresh mozzerella, and tastes like if jack and mozzerella had a baby, only better, not exactly a gourmets chees but a wholly inoffensive, and lovely creation.&lt;/div&gt;

      <description>&lt;div&gt; Milton's bread (is like 98% fat free and f'n delish), colby jack, butter and mayo in the pan and a little italian cream chees with some honey smoked ham thinly sliced.
&lt;br/&gt;sometimes I add tomatoes, sometimes I dip it in either creamy tomato soup or tomatoe sauce - the acidity breaks through some of the fat of the cheese&lt;/div&gt;

      <description>&lt;div&gt;Ok, trying to get on the low-carb band wagon and am reduced to eating the low carb bread but I made myself an acceptable for now substitute:
&lt;br/&gt;
&lt;br/&gt;Heat up my cast iron skillet to medium - medium high
&lt;br/&gt;
&lt;br/&gt;Toast 2 slices Oroweat Carb Counting Multi Grain Bread to a medium toast (where you'd be able to lightly scrape the toastedness)
&lt;br/&gt;
&lt;br/&gt;thinly slice your favorite cheese. I used this yummy low-fat munster (truly, this is good stuff! Can't even tell the difference)
&lt;br/&gt;
&lt;br/&gt;Place between toasted bread. 
&lt;br/&gt;
&lt;br/&gt;Spray pan with butter flavored cooking spray and lightly spray each surface of bread. Using spatula, lightly press bread to pan and flip &amp;amp; repeat on other side until cheese melts. I had to flip to each side twice.
&lt;br/&gt;
&lt;br/&gt;If you are low-carbing, it beats a sharp stick in the eye by more than just a mile and going without just plain sucks.&lt;/div&gt;

Add the "Cheeses from Britain" brand Goat's Milk Cheddar (Trader Joe's), grill in toaster-oven, open face, until cheese starts to drip off. Now sprinkle on a generous amount of ground Ancho Peppers (McCormicks et al.) and cut sandwitch with a sharp knife into bite size pieces. Ancho peppers otherwise known as poblano peppers (people's peppers) have a mild, raisin like dark quality and are medium in strength. Combined with the goaty quaiity of the cheddar this is a truly interesting bite.&lt;/div&gt;

      <description>&lt;div&gt;I know that McAllister's Deli's are growing around the counrty.  We just got ours a little over two years ago.
&lt;br/&gt;
&lt;br/&gt;Anyway...they have a wonderful menu item called "THE BIG CHEESE" which is a onion roll with three cheeses of your choices melted inside.  YUMMY!!!!

&lt;br/&gt;I always get mine with Moz, Swiss and Cheddar.&lt;/div&gt;

      <description>&lt;div&gt;OK- so today I went down to Noah's Bagelry to get me one of those fab grilled cheese sammiches I've mentioned before and to my suprise- they had taken it off the menu!!!  Well, a bagel just wasn't going to cut it, so what does a Budgie do?  I went down to Albertson's and bought me some colby jack cheese, some cream cheese with chives, and some extra sourdough bread.... I then went truckin' over to Sav-On's and bought me a mini George Foreman grill.... And can I just tell you that I made me one of the best damn grilled cheese sammiches I've ever tasted.... It was SO OOEY GOOEY, I ALMOST went to get me a knife and fork to eat it..... We're talkin' cheese drippin' through my fingers and scoopin' it back up off my plate with the crust.... And normally I'm a big fan of the butter, but I think if I had used it- I would've gone into cardiac arrest!!! The grill actually made the bread all nice and crispy with golden stripes..... Not to mention- it "officially" made it a GRILLED cheese sammich! NUMMAS!!!!  I so totally just had to share my ooey gooey goodness moment with you all! ;)&lt;/div&gt;

Luckily I had tomato soup to console me.  It is important to remember to have a good bread/cheese ratio!!  That's what I get for trusting the cafeteria with my sammiches...&lt;/div&gt;

      <description>&lt;div&gt;So yesterday...after much driving ...in and around the city...we found ourselves at the Universal Cafe near Blowfish Sushi.  I discovered a very yummy sammich....indeed. Abolone Mushrooms with yellow squash and zucchini grilled with goat cheese on sourdough... The Mushroom are marinated in olive oil and the veggies are grilled and pressed. The ingrediants are then placed in the sourdough and goat cheese bed and grilled. Dam good grilled sammich...a little steep in price..10with salad.. worth checking out or at least attempting at home.&lt;/div&gt;

      <description>&lt;div&gt;My family was dirt poor when I was a kid. Kool-Aid with only half a cup of sugar, and grilled cheese SANGWICHES were standard fare. There was more government surplus cheese in my neighborhood than I care to think about. The problem with those long carboard 5 lbs. boxes of cheese is that the shit doesn't melt. Instead it kind of loses it's rigid demeanor and just becomes a bit more plyable while collecting some weird kind of cheese sweat all along the surface. 
&lt;br/&gt;
&lt;br/&gt;Fortunately, I've moved far from government surplus food and now enjoy one of my all time favorite meals the way I like them. Butter on the outside of both slices of sourdough bread, pepper-jack cheese, and parmesan cheese sprinkled on both sides of the bread before cooking...okay, gotta go I'm hungry now.-Loving you all like the very reason we're here...R&lt;/div&gt;
