Have you tried grill cheese with a bit of chopped, raw onion? That's how I like them.
I had one for dinner last night and it was wonderful.
I order them in restaurants too, I've never had a problem having them add onions to a grill cheese sandwich. But sometimes they cook the onions. Then its different.

Recently I was at a Friendly's restaurant and decided to order a grilled cheese. I did however ask for additions, onion and bacon. They used red onion (which I prefer) that was cooked within the sandwich itself so it was still mostly raw. Surprisingly yummy!

i'm a purist in the sense that i only like cheese on my sammies.

      however-

i'm a big believer in frying stuff and re-using the pan (for instance, almost everything is improved if you fry it in a pan you used to fry bacon, wiping off excess grease, of course). the best grilled cheese i ever made was a big fat slice of tillamook sharp cheddar on sourdough, fried in a pan i had sauteed onions and garlic in with butter and coarse kosher salt (which i use as a base for like, half of my cooking). it was INCREDIBLE.

        that sounds awesome,
I am a big fan of the garlic, onion effect
but the idea of cooking with essances
        is not too well known...
I got started when I got some hot sauces that
were just too hot really (concentrates) to eat
but started adding them to the water I was cooking
        pasta in.
they came out incredible and spicy but not too spicy.
        anyway yummy post kristen
        cheers
